August is here and it’s time to savour the last days of summer. There’s still time to slow down a little, enjoy the outdoors, and savour the feeling of a relaxed summer spent with family and friends. We’re still loving our cozy porch, and we always try to find an excuse to eat and entertain there. Outdoor entertaining calls for fresh summer desserts that are easy to prepare and not too messy to serve. These tasty Saskatoon Lemon Cheesecake Jars fit the bill plus they use some of our most favourite local berries!

One of the reasons we love living on our acreage is the fact that we can find wild berries hiding on our property in the summer. Along our fence line grows the most delicious patch of wild raspberries, and in our woods you can find wild Saskatoons dangling from giant wild Saskatoon bushes.

Hunting for berries is not only a fun summer activity for me and my girls, but we also get to enjoy tasting our treasures when we’re done! We love Saskatoon berries, and they’re such a fantastic local fruit that have become a staple in the Canadian prairies. Saskatoons look similar to blueberries, and have a sweet nutty taste. They’re fantastic in pies, muffins, and almost any sort of summery dessert!

We’re huge cheesecake fans at this house, so I wanted to create a fun summery dessert that involved a combination of cheesecake and Saskatoons. To make it portable, I thought it would be fun to serve this dessert in little jars.

The addition of lemon to these little Saskatoon cheesecake jars was my mom’s idea. She always likes to add a bit of tartness to desserts made with Saskatoons, and she suggested adding lemon to these. I’m so glad I listened – the flavour combo is absolutely heavenly!

These Saskatoon Lemon Cheesecake Jars are the perfect, easy single-serve dessert for a party on the porch or a picnic on the beach. With only a few ingredients, they are incredibly easy to make, too!

What makes these really easy is a special ingredient – Eagle Brand® Sweetened Condensed Milk. You might already use sweetened condensed milk in family favourite holiday recipes like hello dollies, but did you know it can also be the magic ingredient when creating the perfect summer treat? When you add fruit juices, Eagle Brand® Sweetened Condensed Milk thickens almost magically to form yummy pie and tart fillings, puddings and desserts, without cooking. Here, I’ve used it to make the easiest cheesecake filling ever!

To make these, you need a can of Eagle Brand® Sweetened Condensed Milk, lemons, Saskatoons, graham cracker crumbs, two 8 oz. blocks of cream cheese, vanilla and mason jars.

Whip the cream cheese with an electric beater until it’s nice and fluffy.

Slowly add in the Eagle Brand® Sweetened Condensed Milk and mix.

Add the juice of one lemon and 1 tsp. of vanilla to the mixture, and beat.

Finally, layer graham cracker crumbs, the cheesecake mixture and Saskatoons in some small jars. I used about 2 Tbsp of each layer in these jars.

Top with a sprinkle of fresh lemon zest, and these delicious desserts are ready to serve! If you want the cheesecake layer to thicken, simply chill these jars in your fridge for a couple of hours before serving.

This dessert only takes minutes to make and features the staple berry of the Canadian prairies!
Ingredients
  • 2 8 oz. blocks of cream cheese
  • 1 can Eagle Brand Sweetened Condensed Milk
  • 1 lemon
  • 1 tsp vanilla
  • 2 cups graham cracker crumbs
  • 2 cups Saskatoon berries
  • small mason jars
Instructions
  1. Whip the cream cheese with an electric mixer until it’s fluffy.
  2. Slowly mix in the Eagle Brand Sweetened Condensed milk.
  3. Add the juice of one lemon and 1 tsp vanilla, whip.
  4. In a mason jar, layer 2 Tbsp graham cracker crumbs, 2 Tbsp of the cheesecake mixture and 2 Tbsp of Saskatoon berries. Repeat. Top with fresh lemon zest. Repeat with the remaining jars.
  5. Refrigerate for 2 hours and serve.
