I love cooking flavourful dishes for supper, but I don’t always have the time to cook something that requires a lot of ingredients and time. I’ve only ever heard of beignets from the Disney movie The Princess and the Frog. My girls enjoy that movie, and our dear heroine, Tiana, makes beignets in her New Orleans Cafe. Not only is Streuselkuchen a fun word to say, but it’s one of my favourite German treats! This crumb cake brings back so many wonderful memories for me. My mom, one of my aunts, or my Grandma would always bring it to all of our extended family gatherings – especially around Christmas time. It’s hard to find lunches and suppers to make that are both fast and nutritious. Often, it’s one or the other but not both! One way I’ve found to cut down on cooking time is to steam foods in my Panasonic Steam Convection Oven. It’s a really quick way to cook foods like veggies and fish, and the results are really tender and tasty – especially if you seal your food up in a parchment paper packet. Yum! One of my latest favourites? Steamed lemon pepper fish and asparagus packets. I can prep these in no time at all, and steaming them in the packet locks all the flavours in. I have good intentions every week. Really, I do. Some weeks I’ll even start off by sitting down at my computer and making a real, live meal plan for family suppers. However, life gets busy. Near the end of the week I feel tired and sometimes a little stressed out from all of the family activities, the home office work, the chores, and the cooking that needs to be done. That’s when dinners start to slide and we’ll pick up a pizza in town or have pancakes for supper. Maybe you’re like me and you’re continually working on cutting out junk food in your diet. But are you making sure to replace it with healthy food full of nutrients like fruits and veggies?! I find that’s often my problem when I’m being mindful of my junk food intake – I delete the bad, but then I don’t eat enough of the GOOD. This crazy-good spinach salad has been life changing over the past few weeks. It’s a delicious combo that’s easy to make at home for lunch, and I find it very satisfying. We had our first snowfall last week. This is always a bittersweet day for us up here in Alberta, Canada. We sigh because we realize we need to dig up our old winter boots, make sure the snow tires are on our car and brace ourselves for freezing weather. But then we remember how beautiful and exciting winter is up here. Not only is our landscape transformed into a frozen white wonderland, but there is never ending entertainment that comes with the snow. My dad and Little A immediately made the first snowman of the year last week – they had a blast! Winter is long and cold up here in Canada, but it’s also so very beautiful and fun!
