Lately I’ve been trying to cook as many meals as possible from scratch at home for my family to save money and help us make healthier food choices. I don’t think eating healthy at home has to be hard; simple find a few supper recipes you love and put them on repeat! Sweet & Spicy Shrimp Tacos

Sweet & Spicy Shrimp Tacos

These sweet & spicy shrimp tacos are quick to prepare and full of flavour.
Ingredients
  • Pico de Gallo
  • 3 cloves garlic
  • 1/2 onion, chopped
  • 1 cup chopped tomato
  • 1 jalepeno pepper, chopped with seeds removed
  • juice of one lime
  • salt & pepper to taste
  • Spicy Shrimp
  • 400g raw shrimp
  • 1 Tbsp olive oil
  • 1 tsp Paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • salt & pepper to taste
  • Toppings
  • romaine lettuce or spring greens
  • shredded cheddar cheese
  • corn tortillas
  • Renee’s Gourmet Sweet Onion Vinaigrette
Instructions
  1. To make the pico de gallo, mix the garlic, onion, tomato, jalepeno pepper, lime juice and salt and pepper in a small bowl and refrigerate.
  2. To make the spicy shrimp, mix the shrimp in a large bowl with the olive oil, paprika, garlic powder, chili powder and salt & pepper.
  3. Sautee the shrimp in a pan on medium heat until it’s cooked through.
  4. Add toppings, pico de gallo and shrimp on the corn tortillas, drizzle with Renee’s Gourmet Sweet Onion Vinaigrette and serve.

 

Easy Shepherd’s Pie

Easy Shepherd’s Pie

This simple shepherd’s pie is easy to make and makes great leftovers.
Ingredients
  • 4 large yellow potatoes, peeled and quartered
  • 2 large carrots, peeled and diced
  • 1 Tbsp olive oil
  • 1/4 cup diced onion
  • 1 lb lean ground beef
  • 1 cup frozen or fresh peas
  • salt & pepper to taste
  • 1/4 cup flour
  • 1 cup beef broth
  • 1/4 cup milk
  • 2 Tbsp butter
  • salt to taste
  • 1/2 cup cheddar cheese, shredded
Instructions
  1. Boil a large pot of water and add the potatoes. Cook for 20 minutes or until soft.
  2. Meanwhile, add the olive oil to a large, hot pan on medium heat.
  3. Add the diced onion and sautee until the onion is clear.
  4. Add the lean ground beef and cook until the beef is browned thoroughly.
  5. To the pan, add the diced carrots, peas and salt & pepper. Cook & stir for 10 minutes.
  6. Add the flour and beef broth to the pan and stir until thickened.
  7. Pour the beef mixture into a 9 x 13″ casserole dish.
  8. Drain the potatoes and add the milk, butter and salt. Mash the potatoes.
  9. Spread the mashed potatoes over the meat mixture.
  10. Sprinkle the cheddar cheese over the potatoes.
  11. Bake the shepherd’s pie for 30 minutes at 350 degrees F.

 

Parmesan & Panko Crusted Chicken with Roasted Vegetables

Parmesan & Panko Chicken with Roasted Vegetables

Serves: 4 servings
This supper combo is fresh tasting and full of flavour. A great way to serve chicken and veggies!
Ingredients
  • Roasted Vegetables
  • 1 Red pepper
  • 10 stalks of asparagus
  • 1/2 sweet potato
  • 1 sweet onion
  • 1 Tbsp olive oil
  • sea salt to taste
  • Parmesan & Panko Chicken
  • 1 cup Panko bread crumbs
  • 1/2 grated Parmesan cheese
  • 2 Tbsp chopped parsley
  • 1/3 cup Renee’s Gourmet Classic Ranch Dressing
  • 1/4 tsp black papper
  • 4 boneless skinless chicken breasts
  • 1 Tbsp olive oil
Instructions
  1. To make the roasted vegetables, chop all the vegetables into bite-sized pieces, spread them on a cookie sheet, and sprinkle them with the olive oil & salt.
  2. Mix everything together and bake in the oven at 375 degrees F for 30 min.
  3. Meanwhile, make the parmesan & Panko chicken by mixing the Panko crumbs, parmesan cheese and chopped parsley in a small bowl.
  4. In a separate bowl, combine the dressing and the pepper.
  5. Dip the chicken breasts into the dressing mixture, and then into the Panko mixture and coat them evenly.
  6. Heat a large oven-safe pan on medium heat and add 1 Tbsp olive oil. Fry the chicken on each side for about 2 minutes or until brown.
  7. Put the pan in the oven, and finish cooking the chicken for about 20 minutes or until it’s done at 375 degrees F.
  8. Serve the vegetables and chicken together.
