German Baking: Marble Bundt Cake

I finally had a day last week to bake, and it was wonderful. I’ve missed baking. I find it so relaxing!

(Note: This recipe & blog post was originally published in November of 2013 and I’ve now updated it with new photos! So, no, I’m not currently pregnant but I AM craving cake.)

It’s slightly dangerous, though. I’m a huge fan of eating baked goods too. This marble bundt cake I made last week only lasted a couple of days. I’ll say that’s due to my hungry hubby and not my pregnant, cake-loving self. Yes. That’s it.Continue reading

Bake Healthy Egg Breakfast Muffins

Starting October 1st, we made a diet change in our home. We decided to cut out as much white sugar and white flour as possible. I have thyroid disease (hypothyroidism), and it seems to have been really affecting my health lately – especially my digestive health, it seems. I asked my Dr if I should try going gluten-free, but he suggested to simply cut out more processed foods to see if that helped. It really, really has. It’s been hard, but it’s also been fun to experiment with some more creative meals and snacks that don’t have white sugar or flour in them. One of our latest favourite breakfasts and snacks are these tasty egg “muffins” that are so simple to make and honestly so yummy. I usually make a dozen or two every Sunday, and then I refrigerate them for easy re-heating and snacking throughout the week. My natural tendencies are to grab something sugary or bready for a snack, so having things like these, some cut up fruit and some veggies has really helped steer me in a different direction when I’m hungry.Continue reading

Bake Vanilla Yogurt Streusel Banana Muffins

I have a thing for sweet muffins (as evidenced by this recipe and the one you’re about to read). I also enjoy making banana bread and banana muffins… we always pile our over-ripe bananas in the freezer and they’re the BEST for baking with! These vanilla yogurt streusel muffins were a happy little experiment after a particularly large amount of Costco bananas went prematurely brown (is it just me, or are Costco bananas bad like that?).Continue reading
