Fast & Easy Whole Grain Chicken Burritos (Thanks to Minute Rice!)

I have good intentions every week. Really, I do. Some weeks I’ll even start off by sitting down at my computer and making a real, live meal plan for family suppers. However, life gets busy. Near the end of the week I feel tired and sometimes a little stressed out from all of the family activities, the home office work, the chores, and the cooking that needs to be done. That’s when dinners start to slide and we’ll pick up a pizza in town or have pancakes for supper. My New Favourite DIY Salad: Spinach, Apple, Goat Cheese & Pecan

Maybe you’re like me and you’re continually working on cutting out junk food in your diet. But are you making sure to replace it with healthy food full of nutrients like fruits and veggies?! I find that’s often my problem when I’m being mindful of my junk food intake – I delete the bad, but then I don’t eat enough of the GOOD. This crazy-good spinach salad has been life changing over the past few weeks. It’s a delicious combo that’s easy to make at home for lunch, and I find it very satisfying. Make Battered Fish Tacos with Mango Lime Salsa

My kids are picky eaters. My hubby is a picky eater too, for that matter. We’re a meat-and-potatoes kind of family that doesn’t eat too much “out of the box”. When I was asked to come up with a recipe using MSC-certified seafood from Loblaws (that’s sustainable, eco-friendly fish products), I knew this was a great chance to try to make a new family supper favourite for my crew. I knew it couldn’t be too terribly spicy or different looking, so I thought I’d try to come up with a mild, family-friendly fish taco recipe. I think I’ve done just that and achieved a new supper or lunch hit with these battered fish tacos and mango lime salsa! Make Chicken & Asparagus Crepes

Oh boy – I haven’t posted a recipe in a gazillion years, so I thought it was time to put one here today! As life gets busy, I find it easy to start slacking at the stove, and meals get simpler and not-so-creative. Well, I’m determined to get back into meal planning this Fall and cook up some yumminess again. Meal planning really helps us save money, makes dinner time less stressful, and it also reminds me that cooking is super fun and creative (when you have it all planned out and ready to go)! These chicken and asparagus crepes are SO delicious. They are one of my favourite things to make for family dinners. They are a little more finicky than some suppers, but you can make the crepes in advance if you’d like since you’ll be warming everything in the oven anyhow.
