Easy Make-Ahead School Lunch Ideas (Video)

I'm NOT a morning person, so if there's anything I can do to make prepping school lunches in the morning easier, I'll do it! These simple make-ahead school lunch ideas can be made in advance, and you can even assemble the lunches the night before and pop them in the fridge.

You can put together a whole week's worth of lunches by baking these two simple items at the start of the week, and either refrigerating them or freezing them and placing them into school lunches as needed.

I'm still loving our LG Double Oven from The Brick, and this is an instance that the double oven feature REALLY comes in handy.

On Sunday, I can prepare and bake both of these items at the same time, and have multiple pans in each of the two ovens if needed. This appliance has definitely made my life with kids so much easier!

I'll share the details in the video at the end of this post, but the first dish idea is these adorable pancake bites. I use pre-made pancake mix to make them incredibly fast, but you could also use your favourite pancake recipe. Simply mix up a batch of pancakes as you normally would, and then drop the batter into a mini muffin tin. Add any toppings you wish (I like chocolate chips, sprinkles or fruit), and then bake them for 15 minutes at 350 F.

The second school lunch dish idea are these delicious pizza rolls. To make this one really quick, you can also use a pre-made pizza crust dough, or use your own recipe. Roll the dough out into a rectangle, top it with your favourite pizza toppings (we like pizza sauce, pepperoni and cheese), and then roll the whole thing up like you're making cinnamon buns. Slice the roll into ½" - ¾" pieces, and place each roll on a greased pan. Bake for 30 min at 350 F.

Here are some simply make-ahead school lunch combo ideas that feature these recipes:
