Over the past couple of years, I’ve been really enjoying the taste of a simple gin cocktail. There’s something about the botanical, fresh taste of gin that’s perfect for a zippy and refreshing beverage.

A signature cocktail is a fun addition to a dinner party, especially for Christmas or New Year’s Eve. As much as I love a fancy drink, I like a drink that’s EASY to create even more. This spicy apple gin cocktail is extra simple to make with only 3 ingredients. You don’t need a cocktail shaker to shake the ingredients – simply pour over ice and enjoy! Instead of using a simple syrup, I use ginger ale for the two-in-one bubbles and sweetness. If you’ve ever had an apple gin fizz, this is similar but even easier to make.

What makes this drink look extra fancy are the garnishes. They aren’t essential, but the spiced vanilla glass rimmer and the apple and spices make this cocktail look so pretty. The spicy but sweet flavour of this drink is perfect for any gathering from Thanksgiving dinner to New Year’s eve cocktail hour.

How to make this simple spiced apple gin cocktail recipe

To begin this recipe, cut a lemon into wedges and smooth one wedge around the rim of your glass. You can also use lime wedges instead. I’m using these pretty blue textured glasses, but a mason jar works beautifully too. Dip the glass rim in a mixture of cinnamon & sugar (I used Copper Spice Co’s Winter Spiced Vanilla Bean Sugar grinder which is now unfortunately out of stock).

Next, pour 2 oz of apple or spiced apple flavoured gin over ice into your glass. I’m using Burwood Distillery’s Spiced Apple Gin because it’s Alberta-made and delicious!

Then, top the drink with some ginger ale. You can also substitute this for ginger beer for a more intense ginger taste and less sweetness.

If you’re using a colour changing gin like I am here, this is a fun step to do in front of your guests. Magical!

Now, squeeze the lemon wedges over the glass to add at least 1 oz of fresh lemon juice (or lime juice, if using limes!) to your drink. This will give it a delicious, fresh flavour. You can give your cocktail a quick stir at this point.

The cocktail is now done and fantastic as-is, but you can take it to the next level with garnishes. Cut an apple into matchsticks or apple slices, and add those to the drink along with one cinnamon stick and a whole star anise. Sprigs of rosemary or fresh thyme sprigs would also look beautiful in this drink. YUM! I find these have the best flavour after they’ve sat for a minute with the garnishes soaking. The apple juice from the apples and the subtle licorice flavor from the star anise is amazing!

Ingredients

  • 2 oz spiced apple or apple flavored gin
  • 4 oz ginger ale
  • 1/2 lemon or lime
  • Optional:
  • 2 tsp cinnamon + 2 tsp granulated sugar for glass rimmer
  • 1 cinnamon stick
  • 1 whole star anise
  • 1/2 apple cut into matchsticks or wedges

Instructions

  1. Cut the lemon (or lime) into wedges.
  2. If you want to rim your glass, wipe a lemon wedge around the rim of the glass and dip the rim in a mixture of cinnamon and sugar.
  3. Pour the gin into the glass over ice.
  4. Top with ginger ale.
  5. Squeeze the rest of the lemon slices into the glass and stir.
  6. Optional: garnish with apple cut into matchsticks, a cinnamon stick and a whole star anise.
