These delicious heart shaped beignets are the perfect treat for Valentine's Day!
Serves: 40 beignets
  • 1½ cups warm water
  • ½ cup sugar
  • 2 Tbsp yeast
  • 2 beaten eggs
  • 1¼ teaspoons salt
  • 1 cup evaporated milk
  • 7½ cups flour
  • ¼ cup shortening
  • Canola oil for deep frying
  • 1 cup icing sugar
  1. Mix water, sugar, and yeast together in a bowl and let sit for at least 5 minutes until the mixture is foamy.
  2. Add the eggs, salt and milk to the yeast mixture and mix. Add in the flour a cup at a time until the mixture becomes dough-like. Knead the dough for a few minutes. If desired, reserve half of the dough for later by freezing it in a plastic bag. Let the remainder of the dough proof in the proofing feature of your oven for an hour or until doubled.
  3. Preheat oil in a pot with high sides on your stove until it reaches 350 degrees F.
  4. Roll out the dough to ¼" thickness, and cut it with heart-shaped cookie cutters.
  5. Fry the beignets in the oil for a few minutes on each side, or until they are golden brown.
  6. Lay the beignets on a paper towel after they're fried, and then shake them in a bag with the icing sugar to coat them. Serve immediately.
