Recipe type: Breakfast
Serves: 8 scones
The Biscuits
  • 2 cups all purpose flour
  • 4 Tbsp granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ⅓ cup butter
  • 2 cups strawberries, chopped finely
  • 1 egg
  • ½ cup milk
The Glaze
  • ⅓ cup milk
  • 2 Tbsp butter
  • 1 Tbsp dried culinary lavender
  • 1 cup icing/powdered sugar
  1. To make the biscuits, mix together the flour, sugar, baking powder and salt in a large bowl.
  2. Cut the butter into cubes and add it to the mixture. Use a pastry blender to cut the butter into the mixture until it turns crumbly.
  3. Add the chopped strawberries, egg, and milk to the bowl and mix everything with a fork until it's just combined. Do not over-mix; mixture will be delicate.
  4. Remove the dough from the bowl and form it into a large, flat ball. Cut it into 8 triangular pieces with a pizza cutter, and place the pieces on a parchment paper lined baking sheet.
  5. Bake for 20 mins at 400 degrees F.
  6. To make the glaze, place the milk and butter in a small saucepan on the stove and heat until the mixture is foamy but not boiling. Stir constantly.
  7. Remove the mixture from the heat and add the dried lavender. After 15 minutes, strain the mixture through a fine strainer to remove the lavender buds.
  8. Mix in the icing sugar, and pour over the scones once they're baked & cooled.
