Easy Waffles Eggs Benedict

This eggs benedict recipe has a couple of twists - a non-traditional hollandaise sauce made easy, and using waffles instead of english muffins! It's unexpected and delicious for brunch or breakfast.

  • 1 large, round waffle divided into 4 pieces
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup water
  • 2 tbsp fresh squeezed lemon juice
  • 2 egg yolks
  • salt & pepper to taste
  • 4 eggs
  • 4 slices back bacon
  • fresh or dried parsley flakes
  1. To make the easy hollandaise sauce, melt the butter in a sauce pan on medium heat and add the flour. Whisk.
  2. Continue to whisk the mixture while adding 1 cup of water. Stir until the sauce thickens.
  3. Add the lemon juice and two egg yolks, whisking constantly. Cook for 2 minutes, and then add salt & pepper to taste.
  4. Remove from heat.
  5. Poach the eggs.
  6. Fry the bacon in a skillet.
  7. To assemble the eggs benedict, place the waffle pieces on plates. Layer one piece of bacon on each waffle piece, then a poached egg. Finish with a generous drizzle of hollandaise sauce and sprinkle with parsley if desired.
