The inspiration for this elegant brunch tablescape all began with this absolutely stunning Angelic Embroidered Tablecloth from April Cornell (gifted to me). Isn’t it a dream?! It’s perfect for a vintage or French Country inspired table setting for Mom.

I’ve created a faux floral arrangement for the center of the table (I’ll be sharing a video on that on my YouTube channel this Saturday), used mint coloured dinnerware, golden cutlery, and these beautiful Victorian Rose napkins also from April Cornell.

Now onto my eggs benedict recipe! You can make this with english muffins or with waffles for a fun twist like I’ve done here. Find my favourite waffle recipe right here, and make them before you make the rest. I keep mine in my oven on the “warm” setting while I prepare the rest of the eggs benedict.

This eggs benedict recipe has a couple of twists – a non-traditional hollandaise sauce made easy, and using waffles instead of english muffins! It’s unexpected and delicious for brunch or breakfast.
Ingredients
  • 1 large, round waffle divided into 4 pieces
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup water
  • 2 tbsp fresh squeezed lemon juice
  • 2 egg yolks
  • salt & pepper to taste
  • 4 eggs
  • 4 slices back bacon
  • fresh or dried parsley flakes
Instructions
  1. To make the easy hollandaise sauce, melt the butter in a sauce pan on medium heat and add the flour. Whisk.
  2. Continue to whisk the mixture while adding 1 cup of water. Stir until the sauce thickens.
  3. Add the lemon juice and two egg yolks, whisking constantly. Cook for 2 minutes, and then add salt & pepper to taste.
  4. Remove from heat.
  5. Poach the eggs.
  6. Fry the bacon in a skillet.
  7. To assemble the eggs benedict, place the waffle pieces on plates. Layer one piece of bacon on each waffle piece, then a poached egg. Finish with a generous drizzle of hollandaise sauce and sprinkle with parsley if desired.
