    Make Peanut Butter Energy Balls

    These flavourful, no-bake energy balls are easy to make and provide lots of healthy fats and protein. This mix of peanut butter, oats, coconut and chocolate is a satisfying and delicious snack on the go!

    Now that summer is approaching, I'm always on the lookout for easy snacks and meals that don't require as much cooking. When it gets hot I don't want to turn my oven on that much! I'm also always on the lookout for how to get more protein in the kids and my diet. While I'm not on a low carb or vegan diet, I know that I could certainly cut back on my carb intake and up my protein intake.

    These oh-so-easy to make no-bake peanut butter protein balls are a great summer snack! I've made them several times now and I think I've perfected the recipe. They're great in summer because they don't require an oven, and they're also a good source of protien and healthy fats if you're wanting to add more of those into your diet like I am. You can also easily make these vegan and gluten free!

    Peanut butter energy balls recipe - vegan & gluten free

    I found this base recipe on Texanerin Baking, and tweaked it a little with the addition of hemp hearts and a smidge more salt. The salt really makes the flavours pop, and the hemp hearts add more protein. I use these ones.

    To make these protein-packed energy balls, all you need to do is mix together some natural peanut butter, oats, coconut, hemp hearts, honey, salt & vanilla.

    After everything's mixed together, form the mixture into 1" balls and refrigerate until they're firm. I keep these in my fridge to munch on throughout the work week. They're a satisfying snack that's not carb-heavy! Make these gluten free by ensuring your oats are gluten free, and make these vegan by using a vegan sticky sweetener like agave or maple syrup.

    Ingredients
    • 1 cup natural peanut butter
    • ¼ cup honey (or agave or maple syrup for a vegan version)
    • 2 tsp vanilla extract
    • 1 cup rolled oats
    • ½ cup hemp hearts
    • ½ cup unsweetened shredded coconut
    • ¼ tsp salt
    • ⅓ cup mini chocolate chips (look for sugar free)
    Instructions
    1. In a mixing bowl, mix together all of the ingredients.
    2. Form into 1" balls.
    3. Refrigerate until firm.
    4. Store in fridge for up to 5 days.
