I’ve been making waffles for years and years now, and my waffle recipe has slowly been perfected over time. Waffles are one of our family’s favourite breakfast or brunch foods, and with Christmas coming up they’ll probably end up on our Christmas morning menu.

My recipe started from a Company’s Coming recipe book, and I’ve tweaked a couple of things to make it just right.

These waffles turn out delicious and fluffy every time, and there are a couple of tricks that I think make them perfect.

The most important trick, in my opinion? It’s separating the egg yolks from the whites, beating the whites until they’re fluffy, and then folding them into the waffle batter right before the waffles are cooked. The next little thing that makes these waffles so yummy is adding a mix of butter and canola oil to the batter as the fat. The butter gives the waffles their delicious taste, and the oil gives them their lightness.

Your waffle iron is important, too. We have this Breakfast Central machine and it makes giant waffles with the perfect shape and thickness.

Ready to try my recipe? Here it is! This makes 10 very large waffles, so halve the recipe if you’re using a smaller waffle iron or have a less hungry waffle-eating family than ours.

Serves: 10 large waffles
These waffles are fluffy on the inside, crispy on the outside, and they have a slightly sweet and deliciously buttery taste.
Ingredients
  • 3 cups flour
  • 4 tbsp granulated sugar
  • 2 tbsp baking powder
  • 1 tsp salt
  • 4 egg whites
  • 4 egg yolks
  • 1/4 c melted butter
  • 1/4 c canola oil
  • 2 3/4 cups milk
Instructions
  1. Stir first 4 ingredients together in a large bowl.
  2. Add egg yolks, butter and oil. Mix.
  3. Add milk and mix.
  4. Beat egg whites until stiff and fold into batter.
  5. Cook in hot waffle iron until browned.
