Whole Wheat Oatmeal Coconut Cookies (An Aussie Bites Copycat Recipe)

Have you ever tried those “Aussie Bites” from Costco? SO addicting. They’re like little mini cakelets (that’s a word in my books) filled with all sorts of flavourful ingredients like oats, coconut and dried fruit. I consider them to be mostly healthy, and they are such a filling snack. I thought they’d be fun to try to recreate, but in a cookie format. I modified an Aussie Bites copycat recipe, added some cookie-ish ingredients to it and the result was YUM.

Whole Wheat Coconut Oatmeal Cookies

These make a filling, flavourful snack and they’re also great for breakfast! The whole wheat flour, oats, coconut and apricots make them taste so good, and they keep really well.

Whole Wheat Oatmeal Coconut Cookies (An Aussie Bites Copycat Recipe)

Serves: 3 dozen
These soft and flavourful cookies make a hearty and delicious snack.
Ingredients
  • 1/4 cup honey
  • 1 cup softened butter
  • 1 tsp vanilla
  • 2/3 cup brown sugar
  • 1 egg
  • 2 cups whole wheat flour
  • 2 cups quick oats
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup sunflower seeds (optional – I don’t add them in mine)
  • 1 cup dried fruit (raisins, dates, figs, cranberries, chopped dried apricots – I prefer dried apricots only)
  • 1/2 cup flaxseeds
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Instructions
  1. Preheat your oven to 350 degrees.
  2. Cream together the honey, softened butter, vanilla and brown sugar. Whisk in the egg.
  3. In a separate bowl, mix together the whole wheat flour, oats, coconut, sunflower seeds, dried fruit, flaxseeds, salt and baking soda.
  4. Pour the dry ingredients into the wet ingredients and mix. Roll into 1 inch balls and place on a cookie sheet. Bake for 8-10 minutes until golden brown on the bottom. Makes about 3 dozen cookies.

  1. Hi do you think I could use coconut oil instead of butter? My daughter can’t have dairy, she’s allergic to milk products

    1. Christina hasn’t tried it actually with coconut oil. You will have to let us know how it turns out.
