It’s always helpful to have some super-quick and nutritious lunch ideas on hand – especially for these summer months! If you roast and chop a supply of chicken breast in advance, this delicious Greek rice bowl with Minute Rice’s Whole Grain Brown Rice Ready to Serve Cups can be prepped in 5 minutes or less. I like these Greek rice bowls for lunch because they’re a lot more filling than a regular salad. The addition of the whole grain brown rice gives them more fiber content and doesn’t make me as hungry for a snack later!
