It’s such a tasty lunch option, and oh-so-quick to make.

I like these Greek rice bowls for lunch because they’re a lot more filling than a regular salad. The addition of the whole grain brown rice gives them more fiber content and doesn’t make me as hungry for a snack later!

They’re also great for kids – simply omit or rearrange the ingredients if you have little picky eaters. My girls like to eat the rice, chicken and cucumbers separately on their plates.

The trick to making this Greek rice bowl super quick to prepare is having the chicken ready in advance.

At the beginning of each week, roast some chicken breasts in a casserole dish that’s been prepared with a little olive oil. Sprinkle the breasts with poultry seasoning, and bake them for 20-30 minutes flipping them once.

When the chicken is roasted and cooled, chop it into cubes and store it in your fridge (or your freezer for a longer amount of time). Now you have chicken breast that’s ready for salads and rice bowl lunches!
